Ingredients

Crust

  • 3 ¾ cups (470 grams) all-purpose flour
  • 1 ½ tbsp sugar
  • 1 ½ tsp table salt
  • 3 sticks (12 oz or 340 grams) unsalted butter, cubed and kept very cold
  • ¾ cup very cold water

Filling

  • 3 ½ to 4 pounds apples, peeled, cored and chopped into approximately ½-inch chunks (about 10 cups)
  • Squeeze of lemon juice

  • 3 tbsp cornstarch
  • 1 rounded tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground allspice
  • ⅛ tsp table salt

Topping

  • 2 tbsp heavy cream or 1 egg beaten with 1 tbsp water (for egg wash)

Instructions

  1. Prepare the crust: In a large bowl, measure the flour and whisk in the sugar and salt. Add cold cubed butter, tossing to coat with flour. Using your fingers, pastry blender, or two knives, cut the butter into pea-sized pieces. The mixture should look crumbly but uniform.
  2. Add water to form dough: Stir in ½ cup cold water gradually with a rubber spatula until the dough begins to come together. Add remaining water tablespoon by tablespoon if necessary until the dough forms a soft, loose ball. Divide dough into two pieces, one slightly larger for the bottom crust. Shape each into a rectangle about 1-inch thick, wrap in plastic, and chill for at least 2 hours.
  3. Make the filling: In a large bowl, toss the chopped apples with lemon juice. In a separate bowl, combine sugar, cornstarch, cinnamon, nutmeg, allspice, and salt. Sprinkle this mixture over the apples and toss to coat evenly. Set aside.
  4. Heat oven and prepare pan: Preheat oven to 375°F (190°C). Line a 10×15×1-inch baking sheet or similarly sized jelly roll pan with parchment paper. If smaller, a little extra dough will remain.

  7. Assemble the pie: Remove pan from fridge/freezer. Pour the apple filling with juices evenly over the bottom crust. Place the top dough sheet over the apples, trim edges so both crusts overhang pan edges by about ¾ inch. Seal tightly with fingers.
  8. Prepare for baking: Brush the top crust with heavy cream or egg wash. Cut multiple 1-inch slits across the top crust to allow steam to escape during baking. Place the sheet pan on a larger baking sheet to catch any drips.
  9. Bake the pie: Bake at 375°F for 40 to 45 minutes until the crust is golden brown and the filling bubbles through the slits.
