Sweet Potatoes

  • 1/2 teaspoon cinnamon
  • 2 tablespoons maple syrup
  • Salt to taste

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) to prepare for baking the sweet potatoes.
  2. Bake the sweet potatoes: Pierce the sweet potatoes with a fork and place them on a baking sheet. Bake for 45-50 minutes or until they become soft and easily pierced with a fork.
  3. Cool the sweet potatoes: Allow the baked sweet potatoes to cool slightly so they can be handled safely.
  4. Prepare the fruit filling: While the potatoes bake, heat a skillet over medium heat. Melt butter in the skillet.
  5. Cook the apples and cranberries: Add diced apple, cranberries, nutmeg, cinnamon, and a pinch of salt to the melted butter. Cook for 5-7 minutes, stirring occasionally, until the fruits soften and the cranberries begin to pop.
  6. Add maple syrup: Stir in the maple syrup and cook for an additional 2 minutes to meld the flavors.
  7. Slice the potatoes: Cut the baked sweet potatoes in half lengthwise carefully using a knife.
  8. Scoop out the flesh: Scoop out most of the potato flesh into a bowl, leaving a thin layer inside the skin so it retains shape.
  9. Mash and combine: Mash the scooped sweet potato flesh and stir in half of the prepared cranberry-apple filling.
  10. Fill the skins: Spoon the sweet potato mixture back into the potato skins evenly.
  11. Top with remaining filling: Add the remaining cranberry and apple mixture on top of the filled potatoes for extra flavor and texture.
  12. Bake again: Place the stuffed sweet potatoes back on the baking sheet and bake for another 10-12 minutes, until heated through and slightly golden on top.
