Ingredients
Vegetables and Legumes
- 10 ounces cherry tomatoes, cut in half
- 1/2 medium red onion, thinly sliced
- 1 12-ounce jar of marinated artichoke hearts, strained from liquid
- 1 15-ounce can of cooked chickpeas, strained, rinsed, and dried (about 1 1/2 cups)
- 1 tablespoon capers
Fresh Herbs
- 2 tablespoons fresh basil, cut into thin strips
- 2 tablespoons fresh chives, finely diced
Vinaigrette Dressing
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried parsley
- 1/4 to 1/2 teaspoon salt, to taste
- 1/2 teaspoon garlic powder or 1 garlic clove, finely minced
- 1/4 teaspoon ground black pepper
Instructions
- Prep the Vegetables and Chickpeas: Cut the cherry tomatoes in half, thinly slice the red onion, finely dice the chives, and cut the basil into long thin strips. Drain the marinated artichoke hearts from their liquid and set aside. Rinse and drain the canned chickpeas, then pat them dry with a paper towel to remove excess moisture.
- Make the Tuscan Vinaigrette: In a small bowl, whisk together the olive oil, red wine vinegar, dried parsley, salt, garlic powder (or minced garlic), and black pepper until well combined and emulsified.
- Toss the Salad: In a large bowl, combine the halved cherry tomatoes, sliced red onion, chopped chives, basil strips, marinated artichoke hearts, rinsed chickpeas, and capers. Pour the vinaigrette over the salad and mix gently but thoroughly to ensure all ingredients are coated in the dressing.
- Serve or Chill: You can serve the salad immediately for a fresh crunch or cover and chill it in the refrigerator for 1 to 2 hours to allow the flavors to meld together even better. Enjoy as a refreshing side or light meal.
Notes
- For extra flavor, consider adding a splash of lemon juice to the vinaigrette.
- You can swap fresh herbs depending on availability—parsley or oregano work well.
- Make sure to dry the chickpeas thoroughly to avoid a watery salad.
- This salad keeps well in the refrigerator for up to 2 days, but fresh herbs are best added just before serving for maximum flavor.
- For a vegan option, this salad is already suitable as it contains no animal products.
