Salad
- 5 ounces arugula (about 6 cups)
- 3-4 medium clementines, peeled, halved, and sliced about ¼-inch thick
- ¼ cup clementine pickled red onions (from above)
- ⅓ cup dried cranberries
- ¼ cup pomegranate arils or seeds
- ¼ cup crumbled goat cheese (optional)
- ½ cup butter toasted pecans (from above)
- 2-3 tablespoons maple balsamic dressing (from above, more as needed)
Instructions
- Make the Clementine Pickled Red Onions: Combine hot water, sugar, and ½ teaspoon kosher salt in a medium jar. Stir until sugar is fully dissolved, then add the sliced red onion, clementine juice, and rice vinegar. Secure the lid and shake well. Refrigerate for at least one hour to develop flavor, or prepare up to several days ahead.
- Prepare Butter Toasted Pecans: Preheat the oven to 300°F (150°C) and line a sheet pan with foil. Melt the butter in a microwave-safe bowl, then stir in the pecan halves and ¼ teaspoon kosher salt to coat evenly. Spread the pecans on the prepared pan and roast, stirring every 5 minutes, for 20-25 minutes until medium golden brown. Remove from oven and transfer pecans to a paper towel-lined plate. Sprinkle lightly with additional kosher salt and let cool.
- Make the Maple Balsamic Dressing: In a jar with a tight-fitting lid, combine maple syrup, grainy Dijon mustard, minced garlic, balsamic vinegar, olive oil, ½ teaspoon kosher salt, and ground black pepper. Shake vigorously to emulsify. Shake again before serving.
- Assemble the Salad: In a large salad bowl or serving platter, place the arugula. Top with sliced clementines, drained clementine pickled red onions, dried cranberries, pomegranate arils, and crumbled goat cheese if using. Drizzle with 2-3 tablespoons of the maple balsamic dressing and gently toss or leave layered as desired. Finish by sprinkling the butter toasted pecans over the top. Serve extra dressing on the side.
