- 1 large bunch asparagus, rinsed
- 1 cup peas, fresh or frozen and thawed

- 3 ounces fresh feta, crumbled (about 1/2 cup)
Instructions
- Prepare the asparagus: Trim off the tough, dry bottoms of the asparagus and discard them. Chop the remaining asparagus into 1/2-inch thick coins while leaving the tips fully intact. For a nicer appearance, slice the asparagus on an angle.
- Sauté vegetables: Heat the olive oil in a medium skillet over medium heat. Add the chopped asparagus, peas (fresh or thawed), minced shallot, kosher salt, and freshly ground black pepper. Cook for 3 to 4 minutes, stirring often, until the asparagus turns bright green and is tender but still al dente. Remove the skillet from heat and transfer the contents to a mixing bowl.
- Add herbs and lemon: To the warm vegetable mixture, add half of the chopped fresh mint, half of the parsley, half of the crumbled feta, half of the lemon zest, and squeeze all the juice from the lemon. Toss everything together thoroughly. Taste and adjust seasoning if needed.
- Serve and garnish: Transfer the salad into a serving dish or a shallow bowl. Garnish the top with the remaining mint, parsley, feta, and lemon zest. This salad can be enjoyed warm or at room temperature.
