Ingredients
Gelato Base
- 1 cup granulated sugar
- 1 teaspoon xanthan gum
- Pinch of salt
- 2 cups whole milk
- 1 cup heavy cream
- ¾ cup pistachio paste
- 1 teaspoon vanilla extract
Optional Toppings
- ½ to ¾ cup coarsely chopped pistachios
Instructions
- Make the gelato base: In a small bowl, whisk together the granulated sugar, xanthan gum, and a pinch of salt until combined.
- Warm the milk mixture: Pour the whole milk and the sugar mixture into a saucepan and heat over medium heat, bringing it to a gentle simmer. Stir continuously to dissolve the sugar completely without letting it boil, which should take 2 to 3 minutes.
- Add cream and flavorings: Remove the saucepan from heat, whisk in the heavy cream, then add the pistachio paste and vanilla extract, blending until smooth. Using an immersion blender or a standard blender works well here.
- Chill the mixture: Cover the gelato base and refrigerate for at least 4 hours, or preferably overnight (8 to 12 hours) to develop richer flavor and a better texture.
- Churn the gelato: Pour the chilled base into your ice cream maker and churn according to the manufacturer’s instructions until soft-serve consistency is reached. If desired, fold in the coarsely chopped pistachios towards the end of churning.
- Freeze until firm: Transfer the gelato to an airtight container and freeze until firm enough to scoop, typically a few hours.
- Serve: Remove the gelato from the freezer about 10 minutes before serving to soften slightly, as gelato is traditionally enjoyed at a warmer temperature than American ice cream.
Notes
- Do not let the milk mixture boil to avoid curdling and affecting texture.
- Chilling the base overnight results in a smoother and more flavorful gelato.
- Using an immersion blender helps achieve a perfectly smooth mixture but a regular blender works fine as well.
- Adding chopped pistachios is optional but adds delightful texture and nutty flavor.
- Gelato should be served slightly warmer than regular ice cream for optimal softness and flavor.
