Ingredients
Chicken and Seasoning
- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
Sandwich Components
- 1 avocado, sliced
- 4 slices cheese (Swiss, cheddar, or provolone)
- 4 slices bread (sourdough, ciabatta, or your choice)
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 small red onion, thinly sliced
- 1 tomato, sliced
- Butter or olive oil for grilling the sandwiches
Instructions
- Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a skillet over medium-high heat. Cook the chicken for 6-7 minutes per side until fully cooked and no longer pink inside. Remove and let rest before slicing thinly.
- Prepare the Avocado and Cheese: Slice the avocado and prepare the cheese slices. Set them aside for assembly.
- Prepare the Bread: Spread a thin layer of mayonnaise and Dijon mustard on each slice of bread evenly to enhance flavor and moisture.
- Assemble the Sandwiches: On two slices of bread, layer the sliced chicken, avocado, and cheese. Add thin slices of red onion and tomato on top. Cover with the remaining bread slices, mayo side down.
- Grill the Sandwiches: Heat a skillet or grill pan over medium heat and add butter or olive oil. Place the sandwiches in the pan and cook 3-4 minutes per side, pressing gently with a spatula, until the bread is golden and the cheese melts thoroughly.
- Serve: Remove the sandwiches from the skillet, slice if desired, and serve immediately while warm and melty.
Notes
- Use your preferred type of cheese and bread to customize the flavor profile.
- Letting the chicken rest before slicing helps retain juices for a moist sandwich.
- Adjust the Dijon mustard and mayonnaise ratio to suit your taste.
- For extra crispiness, you can use a panini press instead of a skillet.
- This sandwich pairs well with a light salad or chips for a complete meal.
