A hearty and flavorful Avocado Melt Sandwich featuring tender grilled chicken, creamy avocado, savory cheese, and fresh veggies, all toasted to perfection on your choice of bread. This quick and easy recipe makes a satisfying lunch or dinner in just 30 minutes.

  • Total Time: 30 minutes
  • Yield: 2 sandwiches

Ingredients

Chicken

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Sandwich Components

  • 1 avocado, sliced
  • 4 slices cheese (Swiss, cheddar, or provolone)
  • 4 slices bread (sourdough, ciabatta, or choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil for grilling

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a skillet over medium-high heat. Cook the chicken breasts about 6-7 minutes per side until fully cooked and no longer pink inside. Remove and let rest before slicing thinly.
  2. Prepare the Avocado and Cheese: Slice the avocado and set aside. Prepare the cheese slices ready for layering.
  3. Prepare the Bread: Spread a thin layer of mayonnaise and Dijon mustard on each slice of bread evenly.
  4. Assemble the Sandwiches: On two slices of bread, layer sliced chicken, avocado, and cheese. Add slices of red onion and tomato on top. Top each sandwich with the remaining bread slices, mayo side down.
  5. Grill the Sandwiches: Heat a skillet or grill pan over medium heat. Add butter or olive oil to the pan. Place sandwiches on skillet and cook until the bread is golden brown and cheese melts, about 3-4 minutes per side. Press gently with a spatula to melt cheese evenly.
  6. Serve: Remove sandwiches from pan and let cool for a minute. Slice in half and serve warm.

Notes

  • Use ripe avocados for the best creamy texture.
  • Choose bread that grills well like sourdough or ciabatta for crispiness.
  • Feel free to swap chicken breasts for turkey or omit for a vegetarian option (adjust cheese to your preference).
  • To melt cheese more evenly, cover the skillet briefly while grilling.
  • Serve with a side salad or chips for a complete meal.
