Delightfully easy and elegant, these Baked Cranberry Brie Bites combine flaky puff pastry with creamy melted brie and tangy cranberry sauce, topped with optional crunchy candied pecans and fresh rosemary for a perfect holiday appetizer or party treat.

  • Total Time: 28 minutes
  • Yield: 12 bite-sized servings

Ingredients

Puff Pastry Layer

  • 1 sheet puff pastry, thawed

Cheese and Topping

  • 4 oz brie cheese, cut into 12 cubes
  • ½ cup cranberry sauce (store-bought or homemade)
  • 2 tbsp candied pecans, chopped (optional crunch)
  • Fresh rosemary sprigs for garnish (optional flair)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C), then grease a mini muffin tin thoroughly to prevent sticking.
  2. Prepare Puff Pastry: Roll out the thawed puff pastry sheet on a lightly floured surface and cut it into 12 equal squares. Gently press each square into the cavities of the mini muffin tin, forming small pastry cups.
  3. Assemble Bites: Place one cube of brie cheese into each pastry cup. Spoon a generous amount of cranberry sauce on top of the brie, then sprinkle chopped candied pecans over the sauce if you want added texture and sweetness.
  4. Bake: Place the muffin tin in the preheated oven and bake for 15 to 18 minutes, or until the pastry is golden brown and the cheese is melted and bubbly.
  5. Garnish and Serve: Remove the bites from the oven and allow them to cool in the tin for about 5 minutes. Once slightly cooled, top each bite with a small sprig of fresh rosemary for an aromatic and visually appealing finish before serving.

Notes

  • For homemade cranberry sauce, simmer fresh cranberries with sugar and orange zest until thickened.
  • You can substitute candied pecans with walnuts or omit them for a nut-free version.
  • Ensure puff pastry is fully thawed for easier handling and even baking.
  • Serve warm for the best flavor and texture experience.
  • These bites can be made ahead and baked just before serving to save time during events.
