This Baked Strawberries and Cream French Toast is a delightful overnight breakfast casserole featuring layers of brioche bread, cream cheese, and fresh strawberries soaked in a sweetened egg custard. Baked until golden and tender, it’s perfect for a special brunch or festive morning treat.

  • Total Time: 3 hours 15 minutes
  • Yield: 8 servings

Ingredients

Bread and Cheese

  • 1 (16-ounce) loaf brioche bread, cubed
  • 1 (8-ounce) package cream cheese, cubed

Fruit

  • 1 pound strawberries, diced and divided

Custard Mixture

  • 12 large eggs, beaten
  • 2 cups whole milk
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt

For Garnish

  • 1 tablespoon confectioners’ sugar

Instructions

  1. Prepare the baking dish and layer ingredients: Lightly coat a 9×13-inch baking dish with nonstick spray. Place a layer of cubed brioche evenly into the dish. Spread the cubed cream cheese and half of the diced strawberries evenly over the bread layer. Top with the remaining bread cubes to cover the filling completely.
  2. Make and pour the custard: In a large glass measuring cup or bowl, whisk together the beaten eggs, whole milk, maple syrup, vanilla extract, and kosher salt until homogenous. Pour this mixture evenly over the layered bread, cream cheese, and strawberries. Cover the dish and refrigerate for at least 2 hours or overnight to allow the bread to soak thoroughly.
  3. Preheat and prepare to bake: Remove the baking dish from the refrigerator and allow it to stand at room temperature for 30 minutes. Preheat your oven to 350°F (175°C) during this time.
  4. Bake the casserole: Place the covered baking dish into the oven and bake for 30 minutes. After 30 minutes, remove the cover and continue baking for another 25 to 30 minutes, or until the French toast is golden brown on top and the center is set and firm.
  5. Serve: Remove from the oven and let it cool slightly. Serve immediately, sprinkled with the remaining diced strawberries and dusted with confectioners’ sugar if desired for extra sweetness and presentation.

Notes

  • For best results, allow the bread to soak overnight to absorb maximum flavor and moisture.
  • You can substitute brioche with challah or a sturdy white bread for similar texture.
  • Use fresh, ripe strawberries for the best flavor and sweetness.
  • Whole milk gives creaminess; you can substitute with 2% milk, but the texture will be less rich.
  • To keep the cream cheese from clumping, cut it into small cubes evenly distributed between bread layers.
  • If you prefer a dairy-free version, substitute cream cheese and milk with vegan alternatives.
  • The confectioners’ sugar is optional but provides a lovely finishing touch.
