For the Sugar Cookies

For the Pink Frosting

- 2 tablespoons heavy cream

- 2 tablespoons sprinkles
Instructions
- Preheat oven: Set your oven to 180℃ (350℉) or 160℃ fan assisted and line two baking trays with baking paper to prepare for baking the cookies.
- Make cookie dough: In a medium bowl, beat 200 grams of unsalted butter and 210 grams of icing sugar using a handheld or stand mixer. Start on low speed then increase to medium-high until well combined and creamy.
- Add wet ingredients: Beat in 1 egg and 1½ teaspoons of vanilla paste until the mixture is smooth and creamy.
- Combine dry ingredients: Whisk together 300 grams of flour, 1 tablespoon cornflour, 1 teaspoon baking powder, and ½ teaspoon salt with a fork. Gradually add these dry ingredients to the butter mixture.
- Mix dough: Using the mixer on low-medium speed, combine ingredients until dough is almost uniform. Finish folding with a silicone spatula to avoid over mixing.
- Chill dough: Place the dough in the fridge for 10 minutes to firm up, which helps with rolling and shaping.
- Shape cookies: Use a large cookie scoop (~3 tablespoons) to form dough balls. Place them on the lined trays and gently press down each ball with your palm.
- Bake cookies: Bake for 15-18 minutes until the surface loses its shine but the cookies are not fully golden yet.
- Cool cookies: Let the cookies rest on the baking trays for 5-10 minutes. Transfer them to a wire rack to cool completely before frosting.
- Prepare frosting: In a microwave-safe bowl, heat 2 tablespoons butter and 2 tablespoons heavy cream until butter melts and mixture is hot.
- Mix frosting: Stir in 200 grams icing sugar and ½ teaspoon vanilla paste until smooth. Add more icing sugar if frosting is too thin to achieve a spreadable consistency.
- Color frosting: Add 2-3 drops of pink food coloring until desired shade is reached. Note the color may deepen slightly upon resting.
- Decorate cookies: Spread the pink frosting onto cooled cookies and sprinkle with 2 tablespoons of sprinkles for a festive touch.
