These bakery-style sugar cookies are soft, buttery, and lightly sweetened, perfect for any occasion. They feature a tender crumb with a subtle vanilla flavor, topped with smooth pink frosting and colorful sprinkles for a festive finish. Easy to make with simple ingredients, these cookies bake to a delicate golden edge while staying soft inside.

  • Total Time: 25-30 minutes
  • Yield: 12 cookies

Ingredients

For the Sugar Cookies

  • 200 grams unsalted butter (room temperature)
  • 210 grams pure icing sugar (powdered sugar)
  • 1 egg (room temperature)
  • 1½ teaspoon vanilla paste
  • 300 grams plain flour (all purpose flour)
  • 1 tablespoon cornflour (corn starch)
  • 1 teaspoon baking powder
  • ½ teaspoon salt

For the Pink Frosting

  • 2 tablespoons unsalted butter
  • 2 tablespoons heavy cream
  • ½ teaspoon vanilla paste
  • 200 grams pure icing sugar
  • 2-3 drops pink food colouring (oil based, concentrated preferred)
  • 2 tablespoons sprinkles

Instructions

  1. Preheat oven: Set your oven to 180℃ (350℉) or 160℃ fan assisted and line two baking trays with baking paper to prepare for baking the cookies.
  2. Make cookie dough: In a medium bowl, beat 200 grams of unsalted butter and 210 grams of icing sugar using a handheld or stand mixer. Start on low speed then increase to medium-high until well combined and creamy.
  3. Add wet ingredients: Beat in 1 egg and 1½ teaspoons of vanilla paste until the mixture is smooth and creamy.
  4. Combine dry ingredients: Whisk together 300 grams of flour, 1 tablespoon cornflour, 1 teaspoon baking powder, and ½ teaspoon salt with a fork. Gradually add these dry ingredients to the butter mixture.
  5. Mix dough: Using the mixer on low-medium speed, combine ingredients until dough is almost uniform. Finish folding with a silicone spatula to avoid over mixing.
  6. Chill dough: Place the dough in the fridge for 10 minutes to firm up, which helps with rolling and shaping.
  7. Shape cookies: Use a large cookie scoop (~3 tablespoons) to form dough balls. Place them on the lined trays and gently press down each ball with your palm.
  8. Bake cookies: Bake for 15-18 minutes until the surface loses its shine but the cookies are not fully golden yet.
  9. Cool cookies: Let the cookies rest on the baking trays for 5-10 minutes. Transfer them to a wire rack to cool completely before frosting.
  10. Prepare frosting: In a microwave-safe bowl, heat 2 tablespoons butter and 2 tablespoons heavy cream until butter melts and mixture is hot.
  11. Mix frosting: Stir in 200 grams icing sugar and ½ teaspoon vanilla paste until smooth. Add more icing sugar if frosting is too thin to achieve a spreadable consistency.
  12. Color frosting: Add 2-3 drops of pink food coloring until desired shade is reached. Note the color may deepen slightly upon resting.
  13. Decorate cookies: Spread the pink frosting onto cooled cookies and sprinkle with 2 tablespoons of sprinkles for a festive touch.

Notes

  • Using room temperature ingredients helps the dough mix uniformly and improves texture.
  • Chilling the dough slightly before shaping prevents spreading too much during baking.
  • Do not overbake cookies; they should look matte and just set when removed from the oven.
  • If frosting is too runny, add more powdered sugar gradually to thicken.
  • Oil-based food coloring is recommended for vibrant colors without thinning the frosting.
  • Store cookies in an airtight container to maintain softness.
