These Batter Protein Balls are a quick and easy no-bake snack packed with protein and flavor. Rolled in colorful sprinkles, they provide a fun and cakey treat perfect for on-the-go energy or a wholesome dessert.

  • Total Time: 5 minutes
  • Yield: 14 servings

Ingredients

Wet Ingredients

  • 1 cup cashew butter
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional, but adds a cakey flavor)

Dry Ingredients

  • 1/3 cup vanilla protein powder
  • 1/3 cup oat flour
  • Pinch of salt

Add-ins

  • 3 tablespoons sprinkles (plus more for rolling)

Instructions

  1. Mix wet ingredients: In a large bowl, combine the cashew butter, vanilla extract, almond extract, and maple syrup. Stir well until the mixture is smooth and evenly blended.
  2. Add dry ingredients: Add the vanilla protein powder, oat flour, and a pinch of salt to the wet mixture. Use a rubber spatula to mix everything together until a uniform dough forms.
  3. Fold in sprinkles: Gently fold 3 tablespoons of sprinkles into the dough, distributing them evenly throughout.
  4. Scoop and roll: Using a tablespoon measure, scoop out portions of the dough and roll each into a roughly 1 to 1 1/2 inch ball with your hands.
  5. Roll in sprinkles: For extra fun and texture, roll each protein ball in additional sprinkles to coat the outside.
  6. Refrigerate: Place the finished protein balls on a tray or plate and store them in the refrigerator to firm up. Keep refrigerated for up to 2 weeks.

Notes

  • Use pure cashew butter without added sugar or salt for best flavor.
  • Maple syrup can be substituted with honey or agave syrup to suit your preference.
  • Adding almond extract is optional but adds a delicious cakey note.
  • You can use any flavor of protein powder that you prefer, but vanilla complements this recipe best.
  • If you don’t have oat flour, you can blend oats finely in a food processor to make your own.
  • Store the protein balls in an airtight container in the refrigerator to keep them fresh.
