Ingredients
Beef and Marinade
- 1 1/2 pounds beef tenderloin or flank steak, cut into 1 inch cubes
- Black pepper, to season
- 2 tablespoons oyster sauce
- 2 tablespoons honey
- 1 tablespoon low sodium soy sauce
- 1 tablespoon fish sauce
- 3 cloves garlic, minced or grated
- Crushed red pepper flakes, to taste
Rice and Vegetables
- 1/4 cup sesame or extra virgin olive oil, divided
- 3 cups cooked white rice
- 1 cup shredded radicchio or purple cabbage
- 4 carrots, shredded or cut into ribbons
- 1 Persian cucumber, sliced
- 2 green onions, chopped
Garnishes and Extras
- 1 lime, cut into wedges
- 1/4 cup fresh basil and/or mint, roughly chopped
- Chopped peanuts, for serving
Instructions
- Season and Marinate the Beef: Season the steak cubes all over with black pepper. In a medium bowl, whisk together the oyster sauce, honey, soy sauce, fish sauce, minced garlic, and a pinch of crushed red pepper flakes. Add the beef cubes and toss thoroughly to coat. Set aside to marinate briefly.
- Prepare the Crispy Rice: Heat 2 tablespoons of the oil in a large skillet over high heat. Once the oil shimmers, add the cooked white rice and salt to taste. Toss to coat the rice evenly with the oil, then press the rice mixture evenly across the bottom and partially up the sides of the skillet. Cook without stirring for about 3-5 minutes until the rice turns golden brown and crispy on the bottom. Carefully spoon the crispy rice out onto a plate and set aside.
- Cook the Beef: Return the skillet to high heat and add the remaining 2 tablespoons of oil. Remove the beef cubes from the marinade (reserve the marinade for later) and add the beef to the skillet. Cook the beef undisturbed for 2-3 minutes to develop a good sear, then stir and cook undisturbed for another 2-3 minutes.
- Make the Sauce: Pour the reserved marinade and 3 tablespoons of water into the skillet with the beef. Bring to a boil, then reduce heat to medium and simmer until the sauce thickens and coats the beef, about 3-5 minutes. Remove from heat.
- Assemble the Bowls: Divide the crispy rice among six bowls. Top each with shredded radicchio or cabbage, carrots, and cucumber slices. Spoon the cooked beef and sauce over the vegetables and rice. Squeeze fresh lime juice over each bowl, then garnish with chopped green onions, fresh basil or mint, and chopped peanuts. Serve immediately and enjoy!
