Ingredients
Protein & Base
- 1 lb lean ground beef
- 2 cups short-grain white rice (cooked)
- 4 eggs
Vegetables
- 1 cup carrots, julienned
- 1 cup spinach, fresh
- 1 cup zucchini, sliced
- 1 cup bean sprouts
Sauces & Oils
- 3 tbsp gochujang sauce (adjust for spice level)
- 1 tbsp sesame oil
- 2 tbsp low-sodium soy sauce
Instructions
- Cook the Rice: Prepare the short-grain white rice according to the package instructions. Once cooked, set the rice aside to keep warm.
- Brown the Beef: In a skillet over medium-high heat, add the lean ground beef. Cook for 5 to 7 minutes, breaking it up until fully browned and no pink remains. Drain any excess fat to keep the dish lean.
- Season the Beef: To the skillet with beef, stir in the gochujang sauce, low-sodium soy sauce, and sesame oil. Reduce the heat to low and let it simmer gently for about 5 minutes to deepen the flavors and meld the sauce with the meat.
- Sauté the Vegetables: Using a separate pan or the same skillet after removing beef, heat a little sesame oil over medium heat. Add the julienned carrots, fresh spinach, sliced zucchini, and bean sprouts. Cook them until tender-crisp, approximately 7 minutes, stirring occasionally to prevent burning and ensure even cooking.
- Fry the Eggs: In a non-stick pan over medium heat, fry the eggs sunny-side up. Cook them until the whites are fully set and cooked through but keep the yolks runny, about 3 minutes, for that perfect rich finish.
- Assemble the Bowl: To serve, layer cooked rice at the base of each bowl. Top with the seasoned ground beef mixture followed by the sautéed vegetables. Place a sunny-side-up egg on top of each serving. Optionally drizzle additional gochujang sauce over the bowl for extra spice and flavor. Enjoy immediately.
Notes
- Adjust the amount of gochujang sauce according to your preferred spice level.
- Use low-sodium soy sauce to reduce salt content while maintaining flavor.
- For a vegetarian version, substitute ground beef with seasoned tofu or mushrooms.
- Make sure to keep the egg yolks runny for the traditional bibimbap experience.
- The vegetables can be prepped and sautéed simultaneously to save time.
- Leftovers can be refrigerated up to 2 days; reheat gently before serving.
