Crust
- 1.5 cups Graham Crackers (or Digestive Biscuits), crumbs (about 12–14 crackers, crushed; use gluten-free cookies for GF version)

- 1 cup Greek Yogurt or Cream Cheese, softened (full-fat for richest texture)
- 2 tbsp Lemon Juice
- 1 tsp Vanilla Extract
- Pinch of Salt

Instructions
- Prepare the crust: Crush graham crackers finely using a food processor or by placing them in a plastic bag and crushing with a rolling pin. Mix the crumbs thoroughly with melted butter until well combined. Press this mixture evenly into the bottom and up the sides of a 9-inch pie dish. Chill in the refrigerator for 15 minutes to set the crust.
- Make the blueberry chia filling: Mash the blueberries with a fork or blend briefly to break down some of the berries but retain some texture. In a bowl, whisk together the mashed blueberries, chia seeds, granulated sugar or chosen sweetener, lemon juice, and salt until combined. Gently fold in the Greek yogurt or softened cream cheese until the mixture is smooth and creamy. Allow the mixture to rest for 5–10 minutes so the chia seeds can absorb liquid and thicken the filling.
- Assemble the pie: Spoon the thickened blueberry chia filling over the chilled crust, spreading it evenly and smoothing the top with a spatula. Place the assembled pie back into the refrigerator and chill for at least 2 hours, or preferably overnight, to allow the filling to fully set.
- Garnish and serve: Before serving, decorate the pie with fresh blueberries, lemon zest, and mint leaves for a fresh, vibrant presentation. To slice the pie cleanly, run a knife under hot water, dry it well, and cut through the chilled pie.
