Ingredients
Pasta and Vegetables
- 250 g spiral pasta
- 300 g fresh broccoli florets (from 1 large head of broccoli)
- 2 teaspoons butter
Sauce and Seasoning
- 300 ml thickened cream (heavy cream)
- ¾ tsp garlic powder
- ¼ tsp onion powder
- 1 tbsp Dijon mustard
- ½ teaspoon salt
Protein and Cheese
- 300 g cooked shredded chicken (rotisserie chicken recommended)
- 50 g parmesan cheese (finely grated)
- 1 tsp fresh thyme leaves
- 40 g mozzarella cheese (grated)
Instructions
- Preheat Oven: Preheat your oven to 180°C (350°F) to prepare for baking the pasta dish.
- Cook Pasta and Broccoli: Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions minus one minute. Add the broccoli florets during the last 2 minutes of cooking so they become tender but still retain some crunch.
- Drain and Butter: Drain the pasta and broccoli mixture, return it to the pot, and stir in the butter until melted. Set aside to keep warm.
- Prepare Cream Sauce: In a jug or small bowl, whisk together the thickened cream, garlic powder, onion powder, Dijon mustard, and salt until well combined.
- Combine Ingredients: Add the shredded cooked chicken, grated parmesan cheese, fresh thyme leaves, and the prepared cream sauce to the pasta and broccoli. Stir everything thoroughly to evenly coat the ingredients with the sauce.
- Assemble and Bake: Transfer the pasta mixture into a large baking dish measuring approximately 20 x 30 cm (8 x 12 inches). Sprinkle the grated mozzarella cheese evenly on top. Bake in the preheated oven for 20 to 25 minutes until the cheese is golden brown and the dish is heated through.
Notes
- You can substitute spiral pasta with penne or fusilli if preferred.
- Using rotisserie chicken saves time and adds great flavor, but any cooked shredded chicken works.
- To keep broccoli crisp, add it to the pasta water in the last 2 minutes of cooking only.
- For a lighter version, use light cream instead of thickened cream.
- Feel free to add a pinch of red pepper flakes to the cream sauce for a spicy kick.
