These Buffalo Chicken Biscuits are a delicious, savory treat combining spicy buffalo sauce, creamy cheeses, and shredded rotisserie chicken wrapped in flaky biscuits. Perfect as an appetizer or snack, they’re baked to golden perfection and served with blue cheese or ranch dressing for dipping.

  • Total Time: 36 minutes
  • Yield: 8 servings

Ingredients

Biscuits

  • 1 can (8-count) refrigerated biscuits (not flaky)

Buffalo Chicken Filling

  • 4 ounces cream cheese, room temperature
  • ¼ cup (68 g) buffalo sauce, divided
  • 2 cups (280 g) rotisserie chicken, shredded
  • ¼ cup (28 g) sharp cheddar cheese, shredded
  • ¼ cup (28 g) mozzarella cheese, shredded
  • 1 teaspoon finely diced green onion, plus 1 teaspoon for garnish

Dipping Sauce

  • Blue cheese or ranch dressing, for serving

Instructions

  1. Prepare the Filling: In a large mixing bowl, whisk together cream cheese and ¼ cup buffalo sauce until smooth and well combined. Add shredded chicken, cheddar cheese, mozzarella cheese, and 1 teaspoon diced green onion. Stir everything together until thoroughly mixed to form about 2 ½ cups of filling.
  2. Preheat Oven and Prepare Skillet: Preheat your oven to 375°F (190°C). Spray a 10-inch oven-safe skillet with nonstick cooking spray to prevent sticking.
  3. Roll Out Biscuits: Remove biscuits from the can and place on a clean work surface. Using a rolling pin, flatten each biscuit to approximately ⅛-inch thickness to make them easier to fold and fill.
  4. Fill Biscuits: Spoon about ¼ cup of the buffalo chicken filling onto the center of each flattened biscuit. Carefully pinch the edges together to seal the filling inside, forming a ball or bomb shape.
  5. Brush with Buffalo Sauce: Place the sealed biscuits seam-side down in the prepared skillet. Using approximately 2 tablespoons of the reserved buffalo sauce, brush the tops of each biscuit to add extra flavor and moisture.
  6. Bake Biscuits: Bake the biscuits in the preheated oven for 24 to 26 minutes, or until they are golden brown and cooked through.
  7. Garnish and Serve: Once baked, drizzle the biscuits with any remaining buffalo sauce and sprinkle with the remaining 1 teaspoon diced green onion for garnish. Serve warm with blue cheese or ranch dressing on the side for dipping.

Notes

  • You can substitute shredded rotisserie chicken with cooked chicken breast if preferred.
  • For extra heat, add a pinch of cayenne pepper to the filling.
  • Make sure to seal the biscuit edges tightly to prevent filling from leaking during baking.
  • These biscuits are best served warm the same day but can be refrigerated and reheated.
