Instructions
- Prep: Preheat the oven to 375°F (190°C) and grease a mini muffin tin thoroughly to prevent sticking.
- Mix Dry Ingredients: In a large bowl, combine 1 cup yellow cornmeal, ½ cup all-purpose flour, ¼ cup granulated sugar, 2 teaspoons baking powder, and ½ teaspoon salt. Stir to evenly distribute ingredients.
- Mix Wet Ingredients: In a separate bowl, whisk together ½ cup milk, ¼ cup melted butter, 2 tablespoons honey, and 1 large egg until the mixture is smooth and homogenous.
- Combine Wet and Dry: Pour the wet mixture into the dry ingredients and gently mix until just combined. Be careful not to overmix to keep the batter light. Then fold in ½ cup corn kernels to add texture and sweetness.
- Fill Muffin Tin: Spoon the batter evenly into the prepared mini muffin tin cups, filling each about ¾ full to allow room for rising during baking.
- Bake: Place the muffin tin in the preheated oven and bake for 12-15 minutes. The poppers are done when a toothpick inserted into the center comes out clean and the tops are golden.
- Prepare Glaze: While the poppers bake, mix together ¼ cup melted butter and 2 tablespoons honey in a small bowl.
- Glaze: Once the poppers are out of the oven and still warm, brush the honey butter glaze evenly over the tops to add shine, moisture, and an irresistible sweet finish.
