Ingredients

Oat Crust and Topping

Peanut Butter Filling

  • 1 14-ounce can sweetened condensed milk

Instructions

  1. Prepare the Pan and Preheat: Line a 13×9-inch baking pan with aluminum foil, then spray the foil lightly with cooking spray to prevent sticking. Set aside and preheat the oven to 350°F (175°C).
  2. Mix Oat Mixture: In a large bowl, combine the melted butter, brown sugar, baking soda, and salt. Using an electric mixer on low speed, blend until smooth. Add the all-purpose flour and quick-cooking oats, mixing until the mixture is thoroughly combined.
  3. Reserve Oat Mixture: Remove 1 heaping cup of the oat mixture and set it aside for the topping. Press the remaining oat mixture evenly into the bottom of the prepared baking pan to form the crust.
  4. Pre-Bake the Crust: Bake the oat crust in the preheated oven at 350°F for 10 minutes to set and lightly brown the base.
  5. Prepare Peanut Butter Filling: While the crust bakes, mix the creamy peanut butter and sweetened condensed milk together until smooth and well combined.
  6. Assemble Filling and Toppings: After removing the crust from the oven, pour the peanut butter mixture evenly over the semi-baked oat crust and spread gently. Crumble half of the reserved oat mixture over the peanut butter layer. Sprinkle the semi-sweet chocolate chips across the top, then add the remaining reserved oat mixture evenly.
  7. Bake the Bars: Return the pan to the oven and bake for an additional 25 minutes, or until the oat crumbles on top are just starting to turn golden brown.
  8. Cool and Serve: Let the bars cool completely in the pan. Once cooled, lift the bars out by the edges of the aluminum foil. Cut into 20 bars and serve.
