Ingredients
Rice and Seasoning
- 1 cup raw sushi rice (yields 3 cups cooked)

- ½ teaspoon salt
- 2 ½ tablespoons rice vinegar
Spicy Mayo Sauce
- ¼ cup Japanese mayo
- 1 tablespoon sriracha sauce
Bowls Toppings
- 5 ounces imitation crab
- ½ small carrot, grated
- 1 nori sheet, crumbled
- ½ avocado, diced
- ½ cup cucumber, diced
- 1 teaspoon toasted sesame seeds
To Serve
- 2 tablespoons low-sodium soy sauce
Instructions
- Prepare the rice seasoning: Combine the sugar, salt, and rice vinegar in a small bowl. Warm the mixture gently on the stove or in the microwave until the sugar and salt dissolve completely.
- Cook and season the sushi rice: Cook the sushi rice according to package instructions. Once cooked, slowly fold in the rice seasoning mixture gently to evenly coat the rice and let it cool slightly.
- Prepare the toppings: While the rice is cooking, grate the carrot, dice the avocado and cucumber, and crumble the nori sheet. Slice or shred the imitation crab to desired size.
- Make the spicy mayo sauce: In a small bowl, thoroughly mix the Japanese mayo and sriracha sauce to create a creamy, spicy condiment.
- Assemble the bowls: Divide the cooked and seasoned sushi rice evenly into two bowls. Top each bowl decoratively with imitation crab, diced avocado, diced cucumber, grated carrot, and crumbled nori sheets.
- Garnish and finish: Drizzle the spicy mayo sauce over the toppings and sprinkle each bowl with toasted sesame seeds for added flavor and crunch.
- Serve: Serve each bowl with low-sodium soy sauce on the side or drizzle about one tablespoon over each bowl before eating for an authentic sushi experience.
Notes
- Sushi rice is sticky and needs gentle folding when adding seasoning to avoid mashing the grains.
- You can substitute imitation crab with real crab meat or cooked shrimp for a more authentic version.
- Adjust the sriracha amount in the spicy mayo to control the spiciness level according to your preference.
- Use low-sodium soy sauce to keep sodium levels moderate.
- Toasted sesame seeds add a nutty flavor; you can toast them yourself in a dry pan over medium heat for 2-3 minutes.
- If you don’t have Japanese mayo, regular mayonnaise mixed with a little rice vinegar can be used as a substitute.
