Ingredients
Cheesecake Batter
- 1 cup full-fat cottage cheese
- 1 cup full-fat Greek yogurt
- 2 eggs
- ¼ cup unsweetened cocoa powder
- ¼ cup pure maple syrup or honey
- 2 tbsp cornstarch
- 1 tsp vanilla extract
Instructions
- Preheat the Oven: Set your oven to 325°F (160°C) to prepare for baking the cheesecake evenly.
- Blend Ingredients: Add the cottage cheese, Greek yogurt, eggs, cocoa powder, maple syrup or honey, cornstarch, and vanilla extract into a high-speed blender or food processor. Blend until the mixture is completely smooth and lump-free.
- Prepare Baking Pan: Line a small 6-inch round or square baking pan with parchment paper to prevent sticking. Pour the blended batter into the pan and spread it out evenly, smoothing the top with a spatula.
- Bake the Cheesecake: Place the pan in the preheated oven and bake for 40 minutes, or until the edges are set and the center still has a slight jiggle.
- Cool and Chill: Allow the cheesecake to cool at room temperature. Then transfer it to the refrigerator to chill for at least 6 hours or overnight to fully set and develop its creamy texture.
- Serve: Once chilled, serve the cheesecake plain or garnish with a dusting of cocoa powder, fresh berries, or a dollop of whipped coconut cream for added flavor and presentation.
Notes
- Using full-fat cottage cheese and Greek yogurt helps achieve the creamiest texture.
- Maple syrup can be substituted with honey as a natural sweetener.
- Make sure to blend thoroughly for a smooth batter and avoid lumps.
- The slight jiggle in the center after baking means it will set perfectly once chilled.
- Chilling overnight ensures the best texture and flavor development.
- Optional toppings add a nice contrast in flavor and presentation but are completely optional.
