Crust
- 1 ½ cups graham cracker crumbs

Cheesecake Filling

Streusel Topping

- ¼ cup unsalted butter, cold and cubed
- ¼ cup brown sugar
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper to ensure easy removal of the bars after baking.
- Make the Crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix thoroughly until the crumbs are evenly coated. Press this mixture firmly and evenly into the bottom of the prepared pan to create the crust layer.
- Prepare the Cheesecake Filling: Using a large bowl, beat the softened cream cheese until smooth and creamy. Add the pumpkin puree, brown sugar, eggs, vanilla extract, and pumpkin pie spice. Mix well until all ingredients are fully combined and the batter is smooth. Pour the cheesecake filling evenly over the prepared crust.
- Make the Streusel Topping: In a separate bowl, combine the all-purpose flour, rolled oats, cold cubed butter, and brown sugar. Use a pastry cutter or your fingers to blend the ingredients together until the mixture becomes crumbly and resembles coarse crumbs. Sprinkle the streusel topping evenly over the cheesecake layer.
- Bake the Bars: Place the pan in the preheated oven and bake for 45 minutes or until the center is set and the streusel is lightly golden.
- Cool and Chill: Remove from the oven and allow the bars to cool completely at room temperature. Then, refrigerate the bars for at least 2 hours to allow them to firm up before slicing into 12 bars.
