Ingredients
Cheesecake Mixture
- 8 oz. fat free cream cheese
- 1/2 cup non fat vanilla Greek yogurt
- 1 tsp. vanilla extract
- 1/4 tsp. salt
- 8 oz. tub low fat Cool Whip, thawed
- 12 crushed Oreo thins (for mixing)
Base
- 12 whole Oreo thins
Topping (optional)
- Additional crushed Oreo thins for garnish
Instructions
- Prepare Muffin Tin: Line a standard muffin tin with 12 paper cupcake liners to hold each cheesecake bite securely.
- Add Oreo Bases: Place one whole Oreo thin cookie into the bottom of each cupcake liner. Set the muffin tin aside while preparing the filling.
- Beat Cream Cheese: In a medium mixing bowl, use a hand mixer to beat the softened fat-free cream cheese until it becomes smooth and creamy, ensuring there are no lumps.
- Combine Flavorings: Add the 1/4 teaspoon of salt, 1 teaspoon of vanilla extract, and 1/2 cup of non-fat vanilla Greek yogurt to the cream cheese. Continue beating until the mixture is well combined and smooth.
- Mix in Crushed Oreos: Gently fold or beat in the 12 crushed Oreo thins into the cream cheese mixture until evenly mixed, adding texture and flavor.
- Fold in Cool Whip: Carefully fold the thawed low-fat Cool Whip into the cheesecake mixture until all ingredients are fully integrated, creating a light and airy texture.
- Fill Cupcake Liners: Evenly scoop the cheesecake mixture over the Oreo thin bases in each cupcake liner. Optionally, sprinkle additional crushed Oreo thins on top for an attractive garnish.
- Freeze: Place the muffin tin in the freezer and let the cheesecake bites freeze for at least 3 hours, or until firm.
- Serve: Once frozen and set, remove the cheesecake bites from the muffin tin and liners, and enjoy your delicious, portion-controlled treat.
Notes
- Allow the cream cheese to soften at room temperature before mixing for easier blending.
- Use paper liners that are freezer-safe to prevent sticking when removing the bites.
- These cheesecake bites can be stored in an airtight container in the freezer for up to 2 weeks.
- For a more indulgent version, substitute regular cream cheese and Cool Whip.
- Let the bites sit out for 5 minutes before serving for a creamier texture.
