Ingredients

For the Dough

  • 3/4 cup warm water
  • 1 teaspoon active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon garlic salt
  • 1 tablespoon olive oil
  • 1/2 cup sourdough discard
  • 2 1/4 cups all-purpose flour

For the Topping

  • 2 tablespoons melted butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella
  • 1/2 cup grated parmesan

Instructions

  1. Prepare Yeast: Mix the warm water, active dry yeast, and sugar in the bowl of a stand mixer. Let it sit for about 5 minutes until the mixture becomes foamy, indicating that the yeast is active.
  2. Make Dough: Add the garlic salt, olive oil, and sourdough discard to the yeast mixture. Gradually mix in the all-purpose flour using a dough hook attachment until the dough is smooth and elastic, which should take about 4 minutes.
  3. First Rise: Transfer the dough to a bowl, cover it tightly with plastic wrap, and let it rise in a warm spot for 20 minutes, allowing it to puff up slightly.
  4. Shape Dough: On a floured surface, roll the dough into a rectangle shape. Place it onto a greased 13×18-inch baking sheet and press the dough gently into the corners to form an even layer.
  5. Add Toppings: Brush the top of the dough evenly with melted butter. In a small bowl, combine garlic powder, dried parsley, dried oregano, Italian seasoning, salt, and black pepper and sprinkle this mixture over the dough. Then evenly cover the top with shredded mozzarella and grated parmesan cheeses.
  6. Second Rise: Allow the topped dough to rise again for 15 minutes while simultaneously preheating the oven to 400°F (204°C).
  7. Bake: Place the baking sheet on the lowest rack of the preheated oven and bake for 15 to 20 minutes until the breadsticks are crispy. For a more browned top, move the baking sheet to a higher rack for the last 2 minutes of baking if desired.
  8. Cut and Serve: Remove the breadsticks from the oven and cut the dough lengthwise and then into 12 strips on each side, resulting in 24 individual breadsticks. Serve warm with marinara or ranch dressing for dipping.
