Delicious Cheesy Meatball Subs featuring tender homemade meatballs simmered in marinara sauce, nestled in toasted hoagie rolls, and topped with melted mozzarella, provolone, and parmesan cheeses. Perfect for a hearty and satisfying meal ready in under an hour.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

Meatballs

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup grated onion
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 3/4 tsp salt
  • 1/2 tsp black pepper

Sauce and Assembly

  • 2 cups marinara sauce
  • 4 hoagie or sub rolls
  • 1 1/2 cups shredded mozzarella cheese
  • 4 slices provolone cheese (optional)
  • 1/4 cup grated parmesan cheese
  • 1 tbsp butter (optional, for toasting rolls)
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Prepare the meatballs: In a large mixing bowl, combine ground beef, breadcrumbs, egg, grated onion, minced garlic, Italian seasoning, salt, and black pepper. Mix gently until just combined to avoid dense meatballs.
  2. Shape meatballs: Roll the mixture into 1 to 1.5-inch meatballs and place them evenly spaced on a parchment-lined baking sheet.
  3. Bake the meatballs: Preheat the oven to 400°F (200°C) and bake the meatballs for 18 to 20 minutes, until browned and fully cooked through. Alternatively, you can pan-fry them over medium heat in a skillet, turning to brown all sides evenly.
  4. Simmer in marinara: In a large saucepan, bring the marinara sauce to a gentle simmer. Add the cooked meatballs to the sauce and simmer for 10 to 15 minutes to allow flavors to meld and the sauce to thicken slightly.
  5. Prepare the rolls: Split each hoagie or sub roll open without cutting all the way through. Optionally, brush the inside of each roll with butter and toast in the oven at 400°F for 3 to 5 minutes until lightly crisp.
  6. Assemble the subs: Spoon the meatballs and sauce generously into each roll. Top each with shredded mozzarella and a slice of provolone cheese if using.
  7. Melt the cheese: Place the assembled subs under a broiler for 2 to 3 minutes until the cheese is melted, bubbly, and slightly golden.
  8. Finish and serve: Remove from broiler, sprinkle with grated parmesan cheese and fresh basil or parsley if desired. Serve hot and enjoy your cheesy meatball subs.

Notes

  • Do not overmix meatball mixture to keep meatballs tender.
  • Breadcrumbs can be substituted with gluten-free breadcrumbs for a gluten-free option.
  • Adding butter before toasting the rolls enhances flavor but can be omitted for a lighter version.
  • Provolone cheese is optional but adds a nice melty texture and flavor.
  • Meatballs can be made ahead and refrigerated or frozen before simmering in sauce.
  • Use fresh herbs like basil or parsley to brighten the flavors and for garnish.
