Cheesy Smashed Potatoes are crispy, golden on the outside and tender on the inside baby gold potatoes topped with a mix of parmesan and mozzarella cheeses and seasoned with garlic, paprika, onion powder, and Italian herbs. These baked potatoes make a perfect savory side dish or appetizer, garnished with optional chives and chili flakes and served with a refreshing lazy tzatziki dip.

Ingredients

Potatoes

  • lbs baby gold potatoes

Cheese & Seasonings

  • 2 oz shredded parmesan cheese
  • 8 oz shredded mozzarella cheese
  • Salt (to taste)
  • Garlic powder (to taste)
  • Onion powder (to taste)
  • Paprika (to taste)
  • Italian herb seasoning (to taste)

Optional Garnish

  • Chives (chopped)
  • Chili pepper flakes

Dip

  • Lazy Tzatziki (for serving)

Instructions

  1. Preheat Oven: Preheat your oven to 425℉ (220℃). Line a large rimmed baking sheet with parchment paper to prevent sticking and set aside.
  2. Boil Potatoes: Bring a large pot of salted water to a boil. Add the baby gold potatoes and return the water to a boil. Cook for 10-15 minutes or until the potatoes are fork-tender. The cooking time depends on the size of the potatoes. Immediately remove the potatoes and transfer them to the prepared baking sheet to cool slightly.
  3. Prepare Potatoes: If some potatoes are large, cut them in half. For smaller potatoes, you may skip this. For unsliced potatoes, score them gently in a crisscross pattern to help them smash flatter while keeping their shape intact.
  4. Layer with Parmesan: Spread about 1 tablespoon of shredded parmesan cheese onto the baking sheet where each potato will rest. Place each potato on top of the parmesan layer.
  5. Smash Potatoes: Cut a small square of wax paper or parchment paper and place it over each potato. Using the bottom of a glass, press down gently to flatten the potato as much as possible without breaking it. Remove the wax/parchment paper carefully and repeat for all potatoes.
  6. Season Potatoes: Sprinkle salt, garlic powder, onion powder, paprika, and Italian herb seasoning evenly over each smashed potato.
  7. Add Mozzarella: Top each seasoned potato with a generous amount of shredded mozzarella cheese.
  8. Bake: Bake the potatoes in the preheated oven for about 15 minutes or until the cheese is golden brown and bubbly on top.
  9. Garnish and Serve: Remove from the oven and optionally garnish with chopped chives and chili pepper flakes. Serve warm with lazy tzatziki dip.
