For the Chicken:

- ¼ cup fresh coriander (chopped)
- 1 tablespoon lime juice

For the Avocado Layer:
- 2 ripe avocados (sliced)
- 1 tablespoon lime juice
- Salt and pepper (to taste)
Instructions
- Season the Chicken: Season the chicken breasts evenly on both sides with salt and pepper to enhance flavor.
- Prepare the Glaze: In a small bowl, whisk together honey, fresh lime juice, lime zest, and minced garlic to create a sweet and tangy glaze.
- Cook the Chicken: Heat oil in a large frying pan over medium-high heat. Add the chicken and cook for 6-7 minutes per side until golden brown and cooked through (internal temperature should reach 165°F / 71°C).
- Glaze and Rest: During the last 2 minutes of cooking, brush the honey-lime glaze over the chicken, allowing it to caramelize and coat the chicken beautifully. Remove from heat and let the chicken rest for 5 minutes before slicing.
- Prepare the Rice Base: In a bowl, combine the cooked rice with chopped coriander and lime juice. Season with salt and mix well for a fresh, citrus-infused rice base.
- Prepare the Avocado: Slice the avocados and gently toss them with lime juice, salt, and pepper to prevent browning and add flavor.
- Assemble the Stack: Using a ring mould or large cookie cutter, place it on the serving plate and press the rice mixture firmly into the bottom as the base layer.
- Add the Avocado Layer: Layer the sliced avocado over the rice, arranging the slices slightly overlapping for an attractive presentation.
- Top with Chicken: Arrange the sliced honey-lime chicken over the avocado layer, making the stack visually appealing.
- Finalize and Serve: Carefully remove the mould from the stack. Drizzle any remaining honey-lime glaze around the plate for extra flavor and garnish. Repeat the process for remaining servings and serve immediately.
