Instructions
- Heat the Pan: Drizzle 2 tablespoons of olive oil and add 2 tablespoons of unsalted butter to a large pan. Heat the pan over medium-high heat until the butter is melted and the mixture is hot but not smoking.
- Prepare Chicken Coating: While the pan heats, dredge both sides of each butterflied chicken breast in finely crushed seasoned croutons, pressing gently so the coating adheres.
- Cook Chicken: Place two chicken breasts in the pan. After 1 minute, reduce heat to medium-low and cook for 5 minutes. Flip the chicken and cook another 5 to 7 minutes or until the internal temperature reaches 160°F. Remove cooked chicken to a plate. Add more butter and oil to the pan and repeat with remaining chicken breasts. Set cooked chicken aside.
- Prep the Pesto: Meanwhile, prepare your pesto or have pre-made pesto ready for assembling the sandwiches.
- Toast the Bread: Butter the insides of the hoagie rolls or baguettes generously with softened butter and sprinkle with garlic salt. Place the bread open-faced on a baking sheet. Preheat your oven to the broil setting and toast the bread until golden and crisp. Remove from oven and set aside.
- Assemble the Sandwiches: Spoon a generous amount of marinara sauce onto the bottom half of each bread. Layer each with a cooked chicken breast, then cover the chicken with more marinara sauce. Top with slices of mozzarella cheese.
- Broil to Melt: Place the assembled sandwiches under the preheated broiler until the mozzarella cheese is melted, bubbly, and lightly golden.
- Final Toppings and Serve: Remove the sandwiches from the oven, sprinkle each with Parmesan cheese, and add a smear of pesto on top of the melted cheese to brighten the flavors. Close the sandwich with the top half of the bread and serve immediately.
