Filling
- 1 1/2 cups leftover finely shredded rotisserie chicken
- 1 1/2 cups shredded Mexican blend cheese
- 1/3 cup restaurant-style salsa

- 1 cup refried beans (homemade or store-bought)
Tortillas
- 16 street tacos flour tortillas (warmed)
For Cooking
- 3 tablespoons canola oil (divided)
For Serving
- 1 cup guacamole
- 1 cup pico de gallo
- 1/4 cup sour cream
Instructions
- Preheat Oven: Preheat your oven to 200 degrees Fahrenheit to keep the quesadillas warm after cooking.
- Prepare Filling: In a medium bowl, mix together the shredded rotisserie chicken, shredded Mexican blend cheese, restaurant-style salsa, and chopped fresh cilantro. Season the mixture with kosher salt and freshly ground black pepper according to your taste.
- Assemble Quesadillas: Take one warmed flour tortilla and spread refried beans evenly on half of it. Then, add a generous amount of the chicken mixture on top of the beans. Fold the tortilla over to seal the quesadilla. Repeat this process for all 16 tortillas.
- Cook Quesadillas: Heat 1 tablespoon of canola oil in a large cast iron skillet over medium-low heat. Cook the quesadillas in batches, laying them in a single layer in the skillet. Cook each side until golden brown, approximately 1 to 2 minutes per side. After cooking, place the quesadillas in the preheated oven to keep warm. Repeat this process with the remaining quesadillas, adding the remaining 2 tablespoons of canola oil as needed.
- Serve: Serve the quesadillas immediately while warm, accompanied by guacamole, pico de gallo, and sour cream as desired for dipping and topping.
