Instructions

- Prepare Coating Stations: Set up three shallow dishes: one with all-purpose flour, one with beaten eggs mixed with a splash of water to thin it out, and one with freshly grated Romano cheese.
- Coat the Chicken: Dredge each chicken breast first in flour, shaking off any excess. Next, dip into the egg mixture, ensuring full coverage, and then press into the Romano cheese to coat completely.
- Cook the Chicken: Heat the extra virgin olive oil in a large skillet over medium heat until it shimmers. Carefully place the chicken breasts into the skillet without overcrowding. - Make the Lemon Garlic Sauce: Remove the cooked chicken to a paper towel-lined plate to drain excess oil. Using the same skillet, sauté the minced garlic over medium heat until fragrant, about 30 seconds to 1 minute. Stir in the lemon juice and zest, letting the sauce cook briefly to meld flavors.
- Serve: Plate the crispy chicken breasts and drizzle the lemon garlic sauce over the top. Serve alongside fresh greens or roasted vegetables for a balanced meal.
