Ingredients
Chicken Marinade
- 2 boneless, skinless chicken breasts, thinly sliced
- 1/4 cup teriyaki sauce
- 1 tbsp sesame oil (divided)
- 1 tbsp low-sodium soy sauce
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
Coleslaw
- 2 cups coleslaw mix (cabbage and carrots)
- 2 green onions, thinly sliced
- 1 tbsp rice vinegar
- 1 tsp honey
- 1/2 tbsp sesame oil (from the 1 tbsp divided)
Assembly and Garnish
- 12 wonton wrappers
- 2 tbsp sweet chili sauce
- 1 tsp sesame seeds
- 2 tbsp chopped cilantro
- Oil for frying wonton wrappers (about 1/2 cup vegetable or canola oil)
Instructions
- Marinate Chicken: In a bowl, combine thinly sliced chicken breasts with teriyaki sauce, 1/2 tablespoon of sesame oil, low-sodium soy sauce, minced garlic, and grated fresh ginger. Mix well and let marinate for 10 minutes to infuse flavors.
- Cook Chicken: Heat a skillet over medium heat and add the marinated chicken. Cook, stirring occasionally, for about 5-7 minutes or until the chicken is fully cooked and no longer pink inside. Remove from heat and set aside.
- Prepare Coleslaw: In a separate bowl, toss together coleslaw mix, thinly sliced green onions, rice vinegar, honey, and the remaining 1/2 tablespoon of sesame oil. Mix well to combine and let the flavors meld while you prepare the wontons.
- Fry Wonton Wrappers: Heat about 1/2 cup of oil in a deep skillet or frying pan over medium-high heat. Once hot, carefully fry each wonton wrapper one at a time for 20-30 seconds on each side, or until they turn golden brown and crispy. Remove them onto paper towels to drain excess oil.
- Assemble Tacos: Place a crispy wonton wrapper flat on a plate. Spoon a portion of the cooked chicken onto the center, top with a generous amount of prepared coleslaw, and drizzle with sweet chili sauce.
- Garnish and Serve: Sprinkle each taco with sesame seeds and chopped cilantro for added flavor and presentation. Serve immediately while the wontons are crispy.
Notes
- Use a thin layer of oil when frying wonton wrappers to keep them light and crispy.
- Feel free to substitute chicken breasts with boneless thighs for juicier meat.
- Adjust the sweetness of the coleslaw by adding more or less honey to your taste.
- These tacos are best served fresh to maintain the crispiness of the wonton shells.
- For a spicier kick, add a dash of sriracha or chili flakes to the sweet chili sauce drizzle.
