A flavorful and quick Chilli Halloumi Wrap featuring crispy fried halloumi coated in sweet chilli sauce, fresh cucumber and carrot, creamy homemade tzatziki, and crunchy baby gem lettuce, all wrapped in soft large white wraps. Perfect for a vibrant vegetarian lunch or dinner.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

Halloumi and Marinade

  • 225 g low fat halloumi, thinly sliced
  • 1 tbsp sweet chilli sauce
  • Red pepper flakes or chilli flakes, a pinch (optional)

Tzatziki

  • 200 ml Greek yogurt
  • ⅓ cucumber, grated
  • ½ lime, juiced
  • Salt, a generous pinch

Wrap Fillings

  • 1 cucumber, ⅔ thinly sliced
  • 1 carrot, grated or sliced into matchstick pieces
  • 2 heads of baby gem lettuce (about 6 leaves for wrapping)
  • 1 bunch of coriander

Other

  • 4 large white wraps
  • 1 clove garlic, minced
  • 1 tbsp rapeseed oil
  • Salt & Pepper to taste

Instructions

  1. Marinate Halloumi: Place the thinly sliced halloumi in a bowl, add the sweet chilli sauce and a pinch of red pepper or chilli flakes if you prefer some heat. Mix well to evenly coat all the pieces and let it marinate for at least 15 minutes or up to 24 hours if time allows to enhance flavor.
  2. Fry Halloumi: Heat rapeseed oil in a non-stick frying pan over medium heat. Once hot, add the marinated halloumi slices and cook for about 2 minutes on each side until golden brown and crispy. Add the minced garlic halfway through cooking to infuse the halloumi with garlicky aroma. Remove from heat once done.
  3. Prepare Tzatziki: In a small bowl, combine the Greek yogurt, grated cucumber, lime juice, and a generous pinch of salt. Stir well until the mixture is creamy and evenly blended.
  4. Assemble Wraps: Lay a wrap flat and spread a big dollop of tzatziki in the center, using the back of a spoon to coat the middle area evenly. Place about 3 leaves of baby gem lettuce over the tzatziki, then layer with sliced cucumber, grated carrot, and top with several slices of the fried sweet chilli halloumi.
  5. Finish and Serve: Optionally, drizzle extra sweet chilli sauce and tzatziki on the fillings, then sprinkle fresh coriander leaves on top. Fold the wrap tightly and enjoy immediately for the best texture and flavor.

Notes

  • Marinating the halloumi for longer enhances flavor but is optional if short on time.
  • Use low fat halloumi to reduce calories without compromising taste.
  • Adjust chilli flakes according to your spice tolerance.
  • For a gluten-free option, substitute large white wraps with gluten-free wraps or lettuce leaves.
  • Serve immediately after assembling to avoid soggy wraps.
