This Chinese Scallion Chicken Stir-Fry is a quick and flavorful dish featuring tender marinated chicken breasts cooked to perfection in a savory soy-based sauce with aromatic ginger, garlic, and fresh scallions. Perfect for a weeknight dinner, it pairs beautifully with steamed rice or noodles to create a satisfying and authentic Asian-inspired meal.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

Chicken and Marinade

  • 4 boneless, skinless chicken breasts
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch

Aromatics and Cooking

  • 4-5 scallions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Marinate the Chicken: In a bowl, combine the soy sauce, rice vinegar, sesame oil, and cornstarch. Add the chicken breasts and ensure they are fully coated. Let the chicken marinate for at least 15 minutes to absorb the flavors.
  2. Prepare the Aromatics: While the chicken is marinating, chop the scallions and mince the garlic and ginger. Set these aside to use later in the cooking process.
  3. Heat the Oil: Heat the vegetable oil in a large skillet or wok over medium-high heat until it is hot and shimmering.
  4. Cook the Chicken: Add the marinated chicken breasts to the hot skillet. Cook for 5 to 7 minutes on each side until golden brown and cooked through. Check that the internal temperature reaches 165°F (75°C) for safety.
  5. Add the Aromatics: Add the minced garlic, ginger, and chopped scallions to the skillet with the chicken. Sauté everything together for 2 to 3 minutes until fragrant and the scallions become tender.
  6. Thicken the Sauce: Pour any leftover marinade into the skillet. Allow it to simmer for a few minutes until it thickens slightly and coats the chicken nicely.
  7. Serve: Remove the skillet from heat and let the chicken rest for a minute. Slice the chicken breasts and serve with the scallion sauce spooned over the top. Best enjoyed with steamed rice or noodles.

Notes

  • Marinate the chicken for longer (up to 1 hour) for deeper flavor.
  • Adjust the amount of garlic and ginger to taste for more or less pungency.
  • Use a meat thermometer to ensure chicken reaches a safe internal temperature.
  • Serve immediately after cooking to enjoy the best texture and flavor.
  • Vegetables like bell peppers or snap peas can be added for extra color and nutrition.
