  • 1/4 cup + 2 tbsp (90 ml) heavy cream
  • 1/4 cup (85 g) cherry preserves

Instructions

  1. Mix Dry Ingredients: In a medium mixing bowl, whisk together the all-purpose flour, Dutch-process cocoa powder, baking powder, and sea salt until fully combined. Set this mixture aside for later use.
  2. Cream Butter and Sugars: Using an electric mixer or stand mixer with paddle attachment, cream the softened unsalted butter, light brown sugar, and granulated white sugar on high speed until the mixture is fluffy and smooth.
  3. Add Egg Yolks and Vanilla: Lower the mixer speed to medium and beat in the two room-temperature egg yolks and vanilla extract. Continue mixing until the mixture is light and fluffy, approximately 1 to 2 minutes.
  4. Combine Wet and Dry Ingredients: Gradually add the prepared dry flour mixture to the creamed butter and sugar mixture. Mix on low speed just until no streaks of flour remain, being careful not to overmix.
