Ingredients

Cookie Dough

  • 3/4 cup flour (heat treated and cooled)
  • 1/3 cup unsalted butter (melted and cooled)
  • 1/3 cup dark brown sugar (firmly packed)
  • 3 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon whole milk or heavy cream
  • 1/3 cup mini chocolate chips

Chocolate Coating

  • 2 cups chocolate chips (divided: 3/4 cup and 1-1/4 cups)
  • 1-1/2 teaspoons coconut oil (divided: 1/2 teaspoon and 1 teaspoon)

Instructions

  1. Heat Treat Flour: Heat treat the flour in the microwave or oven as per note 2 until it is light, white, and fluffy, then let it cool to room temperature to ensure safety and proper texture.
  2. Melt Butter: Melt the butter and allow it to cool to room temperature so it doesn’t melt the sugar and cause graininess or greasiness in the dough.
  3. Mix Sugars and Butter: In a medium bowl, whisk together the cooled melted butter, dark brown sugar, and granulated sugar until the mixture is smooth and fully combined.
  4. Add Flavorings and Liquids: Stir in salt, vanilla extract, and milk or cream until everything is well integrated.
  5. Add Flour and Chips: Incorporate the cooled heat-treated flour and mini chocolate chips into the wet ingredients and mix until the dough is combined and smooth.
  6. Chill Dough: Place the cookie dough in the refrigerator for 10 minutes to firm up for easier handling.
  7. Form Dough Disks: Roll dough into approximately 36 small balls (about 1/2 tablespoon each), then slightly flatten each into thick disks. Select 24 disks for the recipe and set aside the rest for snacking or toppings.
  8. Prepare Muffin Pan: Line a miniature muffin pan with 24 cups ready to be filled.
  9. Melt First Chocolate Layer: In a small microwave-safe bowl, melt 3/4 cup chocolate chips with 1/2 teaspoon coconut oil until smooth, then spoon an even amount of this mixture into the bottom of each muffin cup. Tap the pan gently to level the chocolate.
