- 175 g unsalted butter

Buttercream Filling
- 200 g unsalted butter
- 400 g icing sugar
- Pink food colouring (a few drops)
- Sprinkles (for decorating)
Instructions
- Prepare the cookie dough: Add the butter and caster sugar to a bowl and beat together until well combined and creamy, forming the base for your cookie dough.
- Add dry and wet ingredients: Incorporate the plain flour, cocoa powder, egg, and vanilla extract into the butter and sugar mixture. Beat again until the dough starts to come together.
- Knead the dough: Use your hands to knead the biscuit dough on a clean surface gently until it forms a cohesive ball, ready for rolling out.
- Roll and cut shapes: Lightly flour your work surface, roll out the dough evenly, and cut out heart-shaped biscuits using a cookie cutter.
- Chill the cookies: Place the cut biscuits on lined baking trays, spacing them apart, and chill in the refrigerator for at least 30 minutes to firm up the dough.
- Preheat and bake: While the dough chills, preheat your oven to 180ºC (160ºC fan). Bake the cookies for 15 minutes once chilled.
- Cool the biscuits: Remove from the oven and allow the cookies to cool completely on the trays before decorating.
- Make the buttercream: Beat 200 g of unsalted butter alone until smooth and creamy. Gradually add 400 g icing sugar and beat again until combined. Add a few drops of pink food colouring and beat until evenly tinted.
- Assemble the sandwich cookies: Pipe the pink buttercream onto the flat side of half the cookies, covering the entire surface up to the edges.
- Sandwich and decorate: Press the remaining cookies gently on top of the frosted ones to form sandwich cookies. Roll or dip the edges into sprinkles so they stick to the buttercream finish.
- Set the cookies: Let the cookies sit at room temperature for a short time to allow the buttercream to firm up slightly before serving.
