Delight in these charming heart-shaped sandwich cookies featuring rich cocoa-flavored biscuits filled with smooth, pink vanilla buttercream. Perfect for special occasions or a sweet treat, these cookies combine a tender, chocolatey base with a festive, colorful filling rolled in sprinkles.

  • Total Time: 3 hours 12 minutes
  • Yield: 16 servings (8 sandwich cookies)

Ingredients

Cookies

  • 175 g unsalted butter
  • 200 g caster sugar
  • 250 g plain flour
  • 50 g cocoa powder
  • 1 medium egg
  • 1 tsp vanilla extract

Buttercream Filling

  • 200 g unsalted butter
  • 400 g icing sugar
  • Pink food colouring (a few drops)
  • Sprinkles (for decorating)

Instructions

  1. Prepare the cookie dough: Add the butter and caster sugar to a bowl and beat together until well combined and creamy, forming the base for your cookie dough.
  2. Add dry and wet ingredients: Incorporate the plain flour, cocoa powder, egg, and vanilla extract into the butter and sugar mixture. Beat again until the dough starts to come together.
  3. Knead the dough: Use your hands to knead the biscuit dough on a clean surface gently until it forms a cohesive ball, ready for rolling out.
  4. Roll and cut shapes: Lightly flour your work surface, roll out the dough evenly, and cut out heart-shaped biscuits using a cookie cutter.
  5. Chill the cookies: Place the cut biscuits on lined baking trays, spacing them apart, and chill in the refrigerator for at least 30 minutes to firm up the dough.
  6. Preheat and bake: While the dough chills, preheat your oven to 180ºC (160ºC fan). Bake the cookies for 15 minutes once chilled.
  7. Cool the biscuits: Remove from the oven and allow the cookies to cool completely on the trays before decorating.
  8. Make the buttercream: Beat 200 g of unsalted butter alone until smooth and creamy. Gradually add 400 g icing sugar and beat again until combined. Add a few drops of pink food colouring and beat until evenly tinted.
  9. Assemble the sandwich cookies: Pipe the pink buttercream onto the flat side of half the cookies, covering the entire surface up to the edges.
  10. Sandwich and decorate: Press the remaining cookies gently on top of the frosted ones to form sandwich cookies. Roll or dip the edges into sprinkles so they stick to the buttercream finish.
  11. Set the cookies: Let the cookies sit at room temperature for a short time to allow the buttercream to firm up slightly before serving.

Notes

  • Ensure the butter for the dough and frosting is softened to room temperature for easy beating.
  • Chilling the dough prevents spreading and helps maintain cookie shape during baking.
  • The pink food colouring quantity can be adjusted depending on desired color intensity.
  • Use parchment or baking paper on trays to prevent sticking and ease cleanup.
  • Store sandwich cookies in an airtight container at room temperature for up to 3 days.
