Instructions
- Melt the Chocolate and Almond Paste: Combine 120g of white chocolate and 30g of almond paste in a Bain-Marie over medium heat. Stir gently until both are fully melted and the mixture is smooth, ensuring the chocolate does not scorch.
- Infuse the Cream: Heat 60g of heavy cream with the vanilla seeds (scraped from the vanilla bean), grated orange zest, and 0.4g cinnamon in a small saucepan. Bring to a simmer and let it simmer gently for 2-3 minutes. Remove from heat and let the cream infuse for 10-15 minutes to develop flavor.
- Blend the Ganache: Whisk the infused cream slowly into the melted white chocolate and almond paste mixture until fully combined. Add 30g of freshly squeezed orange juice and blend until the ganache is smooth and glossy.
- Chill the Ganache: Allow the ganache to cool at room temperature for a short while, then cover it and refrigerate for at least 2 hours to thicken and develop richness.
- Heat the Milk: Pour 300g of your chosen milk into a saucepan and warm it over medium heat until steaming and about 85°C (185°F), avoiding boiling to preserve flavors.
- Combine and Froth: Blend approximately 50g of the chilled ganache with the hot milk. Use a whisk or a milk frother to mix thoroughly and create a frothy texture.
- Serve and Garnish: Pour the frothy chocolate orange almond cocoa into a mug. Top generously with whipped cream, then sprinkle extra cinnamon and orange zest over the top for garnish and an enhanced aroma.
