Ingredients
Ice Pops Base
- ½ cup whole shelled pistachios
- 2 cups whole milk
- ½ cup granulated sugar
- 2 teaspoons vanilla extract
Chocolate Coating
- 11 ounces white chocolate chips
- ⅓ cup pistachio paste
Instructions
- Blend Pistachios: In a blender, grind the whole shelled pistachios until they become a fine powder to ensure a smooth texture in the ice pop base.
- Mix Ingredients: Add whole milk, granulated sugar, and vanilla extract to the blender. Blend again until all ingredients are thoroughly combined.
- Freeze Initial Mixture: Pour the blended mixture into popsicle molds equipped with wooden sticks. Place them in the freezer and allow to chill until fully firm, which takes at least 4 hours.
- Melt White Chocolate: While the popsicles are freezing, melt the white chocolate chips using a double boiler method; melt the chocolate in a metal bowl placed over a pot of simmering water, stirring occasionally until smooth.
- Prepare Pistachio Drizzle: Combine the pistachio paste with 2 tablespoons of the melted white chocolate and mix well. Set this mixture aside for later drizzle.
- Coat Ice Pops: Once the popsicles are solid, carefully remove them from their molds. Dip each popsicle into the melted white chocolate, letting any excess drip off.
- Freeze Coated Popsicles: Place the coated popsicles on a sheet tray and return them to the freezer until the chocolate coating hardens, about 30 minutes.
- Add Pistachio Drizzle: Take the popsicles from the freezer and drizzle the pistachio and white chocolate mixture over them for added flavor and decoration.
- Final Freeze and Serve: Return the popsicles to the freezer until completely firm and ready to serve. Enjoy as a refreshing and elegant frozen dessert.
Notes
- For best results, ensure the pistachios are finely ground to prevent graininess in the ice pops.
- If pistachio paste is unavailable, you can make your own by blending shelled pistachios with a small amount of oil until smooth.
- Use whole milk for a creamier texture; substitutes like almond or oat milk can be used but may alter flavor and consistency.
- Be gentle when dipping popsicles in chocolate to avoid breaking them.
- Store the finished ice pops in an airtight container or tightly wrapped to prevent freezer burn.
