Instructions
- Prepare the Cheesecake Mixture: Beat the softened cream cheese in a large bowl until creamy and smooth. Then add the powdered sugar and vanilla extract, mixing well until fully combined and fluffy.
- Melt the White Chocolate: Melt the white chocolate chips using 20-second intervals in the microwave, stirring between each until smooth. Allow the melted white chocolate to cool slightly to prevent curdling before folding it into the cream cheese mixture.
- Add the Crumbs and Whipped Topping: Stir in the crushed graham crackers or cookie crumbs until evenly distributed. Gently fold in the thawed whipped topping to keep the mixture light and airy without deflating it.
- Chill and Shape: Refrigerate the combined mixture for 30–40 minutes to firm up, making it easier to shape. Once chilled, roll the mixture into 1-inch balls using your hands and place them on a parchment-lined baking sheet.
- Melt and Color the Coating: Melt the red and green candy melts separately following package instructions, typically warming in the microwave in short bursts. Dip each cheesecake ball into the melted candy melts to fully coat, then place them back on the parchment paper. Quickly decorate with holiday sprinkles before the coating sets. Allow the bites to set until firm.
