- 1 tbsp milk
- ¾ tsp cream cheese flavoring extract
- ½ tsp butter extract

Instructions
- Cream the butter and sugars: In a large mixing bowl, beat together the softened butter, granulated sugar, and light brown sugar until the mixture is creamy and smooth, which takes about 5 minutes.
- Add egg yolk and extracts: Mix in the egg yolk, vanilla extract, butter flavor extract, and almond extract thoroughly to combine all wet ingredients seamlessly.
- Prepare dry ingredients: In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt to evenly distribute the leavening agents and salt.
- Combine wet and dry mixtures: Gradually add the dry mixture into the wet mixture, mixing on low speed just until the dough forms and no large flour pockets remain.
- Chill the dough: Shape the dough into a disk, wrap it tightly in plastic wrap and refrigerate for at least 15 minutes or up to overnight. If chilled overnight, bring the dough close to room temperature before rolling.
- Prepare workspace: Lightly flour a flat surface or layer parchment paper (two sheets recommended) to prevent sticking when rolling out the dough.
- Roll out the dough: Roll the dough into a 12 by 10-inch rectangle, ensuring an even thickness throughout.
- Make cinnamon filling: In a small bowl, melt butter in the microwave. Stir in the brown sugar, ground cinnamon, salt, and corn syrup until combined.
- Spread filling: Immediately pour the cinnamon mixture evenly over the dough, then use a spatula to carefully spread it, leaving about a ½-inch border on all sides without filling.
- Roll the dough log: Starting from the longer 12-inch side, carefully and tightly roll the dough into a log shape, using the parchment paper to guide and keep the roll tight and uniform.
- Freeze the rolled dough: Wrap the dough log in parchment paper and place it on a sheet pan in the freezer for 15 minutes to firm up.
- Preheat oven and prepare baking sheet: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking.
- Slice the cookies: Remove the chilled dough from the freezer, unwrap, and cut into ¼-inch thick slices. Cut the log in half and then slice each half into about 15 slices to get 30 total cookies.
- Bake the cookies: Place the sliced cookies on the prepared baking sheet and bake in the preheated oven for 10 to 12 minutes until lightly golden.
- Cool before frosting: Remove cookies from the oven and let them cool completely on a wire rack before adding frosting.
- Prepare frosting: Beat the softened cream cheese until smooth, then add the softened butter. Beat in salt, powdered sugar, and milk until creamy. Mix in cream cheese flavoring extract, butter extract, and almond extract until well combined.
- Frost the cookies: Spread or pipe the cream cheese frosting over the cooled cookies evenly.
- Decorate: Top the frosted cookies with purple, yellow, and green sprinkles for a festive touch.
Notes
- Chilling the dough overnight enhances flavor but bring it close to room temperature before rolling to avoid cracking.
- Using parchment paper to roll and roll up the dough helps keep the shape neat and tight.
- Be careful not to overbake the cookies to maintain a soft, chewy texture.
- Feel free to customize the sprinkles colors or omit if preferred.
- Ensure cookies are fully cooled before frosting to prevent melting the frosting.
