This Cinnamon Swirled Banana Bread is a moist and flavorful twist on classic banana bread, featuring a rich cinnamon sugar swirl that adds a sweet and spicy depth to every bite. Perfectly baked with ripe bananas and a buttery cinnamon sugar mix, this loaf is ideal for breakfast, snacks, or dessert.

  • Total Time: 1 hour 30 minutes
  • Yield: 8 servings

Ingredients

Batter

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 and 1/2 cups mashed ripe banana (about 4 bananas)

Cinnamon Sugar Swirl

  • 3 tablespoons unsalted butter, melted
  • 3 tablespoons granulated sugar
  • 3 tablespoons dark brown sugar
  • 2 tablespoons ground cinnamon

Garnish

  • 6 thin slices of ripe banana

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Lightly grease and flour a 9×5-inch loaf pan and set it aside to prepare for baking.
  2. Make the batter: In a large bowl, combine the melted butter with granulated sugar, then whisk in the eggs and vanilla extract until smooth. Add the all-purpose flour and baking soda, stirring until just combined. Fold in the mashed bananas gently to avoid overmixing.
  3. Prepare the cinnamon sugar swirl: In a small bowl, mix together the melted butter, granulated sugar, dark brown sugar, and ground cinnamon using a fork until thick and well combined. Adjust consistency by adding more melted butter if it’s too thick to swirl but avoid making it too runny.
  4. Layer the batter and swirl (first layer): Spread about 1 cup (1/4 of the batter) evenly into the bottom of the prepared loaf pan. Dollop about 1 tablespoon (1/4 of the cinnamon sugar mixture) over the batter, then swirl it through the batter using a table knife or spoon to create a marble effect.
  5. Add second layer and swirl: Spread roughly 1 cup (1/3 of remaining batter) evenly on top of the first layer. Dollop about 1 tablespoon (1/3 of remaining cinnamon sugar) over this layer, then swirl again to maintain the cinnamon pattern.
  6. Add third layer and swirl: Spread about 1 cup (1/2 of the remaining batter) evenly over the second swirl layer. Dollop the remaining cinnamon sugar (about 1 tablespoon) on top and swirl thoroughly to distribute the cinnamon flavor.
  7. Top with remaining batter and swirl: Spread the final portion of batter evenly over everything and dollop the last cinnamon sugar mixture on top. Create large swirls throughout the entire loaf for visible cinnamon ribbons. Place six thin banana slices down the center of the batter for garnish.
  8. Bake the banana bread: Place the loaf pan on a baking sheet in the center rack of the preheated oven. Bake for 60 to 70 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean. If the top browns too quickly, tent the loaf with foil and continue baking until fully cooked inside.
  9. Cool before slicing: Remove the loaf pan from the oven and let the bread cool in the pan for at least 30 minutes before removing and slicing. This allows the bread to set and makes slicing easier.

Notes

  • Use very ripe bananas for the sweetest flavor and best texture.
  • If your cinnamon sugar swirl mixture is too thick, add an extra tablespoon of melted butter to thin it out.
  • Be careful not to overmix the batter after adding flour and bananas to avoid a dense loaf.
  • Swirling the cinnamon sugar carefully helps create beautiful marbled layers throughout the bread.
  • Using a baking sheet underneath the loaf pan helps catch any drips and ensures even heat distribution.
  • Cooling the loaf in the pan prevents it from breaking apart when sliced.
