Instructions

- Heat the Oil: In a medium, deep-sided pan or pot, add about 1 inch of oil and heat it over medium-high until it reaches 375°F. You can test readiness by dipping the end of a wooden spoon into the oil; if bubbles form around it, the oil is ready. Then reduce the heat to medium to maintain temperature.
- Cook the Funnel Cake: Drizzle the batter from the cup in a thin stream, swirling around the hot oil in overlapping circular motions as desired to create a lattice pattern. Fry for approximately 2 minutes until the bottom turns a light golden brown, then flip carefully and cook the other side for an additional 2 minutes until golden brown.
- Serve: Remove the cooked funnel cake with a slotted spoon and drain on paper towels briefly. Dust generously with 2 tablespoons of powdered sugar. Repeat the frying process with the remaining batter for a second cake.
