Instructions

  1. Prepare the Marinade: In a large mixing bowl, combine the sliced ginger, minced garlic, soy sauce, dark soy sauce, coconut milk, brown sugar, lime juice, salt, and pepper. Whisk thoroughly until all the ingredients are well blended to create a smooth marinade.
  2. Marinate the Chicken: Add the chicken chunks to the marinade, turning them to ensure every piece is coated well. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 4 hours to allow the flavors to penetrate the meat deeply.
  3. Assemble the Skewers: Remove the chicken from the marinade and thread the pieces onto the soaked skewers. Leave a little space between each piece to promote even cooking and allow the heat to circulate around the chicken.
