Instructions

- Prepare Broth Mixture: Stir together the curry powder, turmeric, chicken broth, coconut milk, salt, and black pepper to create a rich, flavorful liquid base. If desired, add fish sauce or lime juice at this stage for extra depth.
- Simmer Chicken: Add the boneless chicken thighs to the pot with the broth mixture. Cover and let them simmer gently over medium-low heat for about 20 minutes, until the chicken is cooked through and tender.
- Cook Rice Separately: While the chicken simmers, cook the jasmine rice according to package instructions to achieve fluffy, separate grains that will accompany the brothy chicken.
- Slice and Assemble: Remove the cooked chicken from the pot and slice it into bite-sized pieces. Place the sliced chicken into serving bowls and ladle the hot coconut chicken broth over them.
- Garnish and Serve: Top each bowl with chopped green onions, fresh cilantro, and lime wedges for brightness and a fresh finish. Serve immediately for a warm, comforting meal.
