Brownies
- 1 stick unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1.5 tsp instant coffee granules
Coffee Frosting
- 2-4 tbsp heavy whipping cream
- 1/3 cup unsalted butter
- 2 cups powdered sugar
- 1.5 tsp instant coffee granules (mixed into cream)
Instructions
- Preheat and prepare pan: Preheat your oven to 350°F (175°C). Prepare an 8-inch baking dish by spraying it with non-stick spray or lining it with parchment paper and spraying the parchment as well to prevent sticking.
- Melt butter: Place 1 stick of unsalted butter into a microwave-safe bowl and melt it in the microwave until fully liquid, careful not to overheat.
- Combine brownie ingredients: In a large mixing bowl, add the melted butter, granulated sugar, eggs, vanilla extract, cocoa powder, all-purpose flour, salt, and baking powder. Stir thoroughly until the batter is smooth and homogeneous.
- Bake brownies: Pour and spread the brownie batter evenly into the prepared baking dish. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs.
- Cool brownies: Remove the brownies from the oven and allow them to cool completely in the pan to set properly before frosting.
- Prepare coffee cream: Mix the instant coffee granules into the heavy whipping cream until dissolved. Set this coffee cream mixture aside.
- Make frosting: In a large bowl, beat the 1/3 cup unsalted butter until it becomes light and fluffy. Gradually add the powdered sugar while continuing to beat. Slowly add the coffee-infused heavy cream starting with 2 tablespoons and mix well. Add additional cream 1 tablespoon at a time until the frosting reaches the desired spreadable consistency.
- Frost brownies: Spread the coffee frosting evenly over the cooled brownies using a spatula for a smooth finish.
- Serve and store: Slice the brownies into 16 squares and enjoy! Store any leftovers in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
