Chicken

  • 2 Chicken drumsticks (bone in, skin on)

  • 1 teaspoon Ground black pepper
  • 2 tablespoons Extra virgin olive oil

Vegetables & Others

  • 1 medium Yellow onion (sliced)
  • 1 Red bell pepper (sliced)
  • 1 Green bell pepper (sliced)
  • 1 cup Kalamata olives
  • 2 cups Baby bella mushrooms (sliced, aka crimini)
  • 3 cloves Garlic (minced)

Tomato & Stock

  • 28 ounces Crushed tomatoes
  • 14.5 ounces Diced tomatoes
  • 1 cup Chicken stock

Instructions

  1. Season the chicken: Mix 1 teaspoon of salt and the ground black pepper together, then sprinkle evenly over all the chicken pieces to ensure they are well seasoned.
  2. Brown the chicken: Heat the olive oil in a medium skillet over medium-high heat. Place about half of the chicken pieces skin-side down into the skillet. Cook for approximately 3 minutes on each side or until the chicken is browned and golden. Remove and set aside on a plate. Repeat this process with the remaining chicken pieces.
  3. Prepare the slow cooker base: In the slow cooker, combine the sliced onions, red and green bell peppers, Kalamata olives, sliced mushrooms, minced garlic, crushed tomatoes, diced tomatoes, chicken stock, and the remaining 1/2 teaspoon of salt. Stir to mix the ingredients evenly.
  4. Add the browned chicken: Nestle the browned chicken thighs and drumsticks into the tomato and vegetable sauce in the slow cooker, ensuring they are partially submerged for even braising.
