Instructions
- Prepare the Baking Pan: Preheat your air fryer or oven to 350℉ (175℃). Line a 6-inch round cake pan with parchment paper to prevent sticking and ensure easy removal.
- Make the Batter: Place the cottage cheese in a small food processor and pulse until mostly smooth. Add the eggs, cacao powder, arrowroot powder (or cornstarch), granulated sweetener, vanilla extract, and salt, then pulse again until the mixture is smooth and well combined.
- Assemble and Bake: Pour the batter into the prepared pan, then sprinkle the chocolate chips evenly over the top. Bake for 30 minutes, rotating the pan halfway through baking to ensure even cooking, until the top puffs up.
- Cool and Serve: Remove the cake from the oven and let it set in the pan for 15 minutes; the top will deflate slightly. Drizzle the top with peanut butter and sprinkle with flaky salt if desired before serving.
- Optional Refrigeration: For a gooey texture, serve the cheesecake immediately. For a firmer, more traditional cheesecake texture, refrigerate it for at least a few hours before serving.

- You can substitute arrowroot powder with cornstarch if preferred.
- Customize the sweetener to your taste, using granulated sugar, erythritol, or any preferred low-carb sweetener.
- The cake pans should be no larger than 6 inches to maintain the right thickness and baking time.
