Cookie Dough
- 1 cup unsalted butter, room temperature
- 1-1/4 cups granulated sugar
- 1/4 cup buttermilk
- 1 egg
- 2 teaspoons JRC Liquid Cotton Candy or cotton candy flavoring (divided)
- 2-1/4 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 drop soft pink gel food coloring
- 1 drop sky blue gel food coloring
Buttercream Frosting
- 1/2 cup unsalted butter, room temperature
- 1-1/2 cups confectioners’ sugar
- 1 teaspoon JRC Liquid Cotton Candy or cotton candy flavoring
- 1 drop soft pink gel food coloring
- 1 drop sky blue gel food coloring
Instructions
- Prepare sugar cookies: Preheat your oven to 350 degrees F (175 degrees C) and line baking sheets with parchment paper to prevent sticking.
- Cream butter and sugar: In a stand mixer fitted with the paddle attachment, beat the 1 cup butter and 1-1/4 cups granulated sugar on medium speed for 2 to 3 minutes until the mixture is light and fluffy.
- Combine wet ingredients: In a small bowl, whisk together the buttermilk, egg, and 2 teaspoons of cotton candy flavoring. With the mixer on low, slowly add this wet mixture to the creamed butter and sugar, mixing until fully incorporated. Scrape the bowl’s bottom and mix an additional 15 to 30 seconds for even blending.
- Add dry ingredients: Gradually add the flour, baking soda, salt, and baking powder to the wet mixture. Mix on low speed until just combined and the dough pulls clean from the bowl sides. If the dough feels too dry, add buttermilk one teaspoon at a time until scoopable.
- Color and swirl dough: Divide the dough evenly between two bowls. Add one drop of soft pink gel food coloring to one bowl and mix/knead until mostly pink. Add one drop of sky blue gel food coloring to the other bowl until mostly blue. Place both colored doughs into a larger bowl and gently swirl them together, taking care not to overmix.
- Scoop and shape cookies: Using a 1-1/2 inch scoop, portion dough onto the prepared baking sheets spaced two inches apart. Flatten each cookie gently with the base of your palm to about 2-1/2 inches in diameter.
- Bake the cookies: Bake in the preheated oven for 6 to 10 minutes, monitoring closely. The cookies are done when the edges start to brown and the centers are set. Cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
- Prepare buttercream: In a stand mixer bowl, beat 1/2 cup butter for about 2 minutes until creamy. Slowly add confectioners’ sugar while mixing on low, then increase to medium-high and beat for 2 minutes until light and fluffy. Add 1 teaspoon cotton candy flavoring and beat on high for another minute.
- Color buttercream: Divide the buttercream evenly between two bowls. Add a drop of soft pink gel food coloring to one, mixing until uniform, and a drop of sky blue gel food coloring to the other, mixing similarly.
- Fill piping bag: Transfer the pink and blue buttercream alternately into a piping bag fitted with a No. 8B tip by adding small scoops carefully to preserve the color separation.
- Pipe buttercream on cookies: Flip over half of the cooled cookies and pipe buttercream starting from the center outward in a circular motion, leaving a 1/2 inch exposed ring around the edge.
- Assemble cookie sandwiches: Top each buttercream-topped cookie with a plain cookie, pressing gently so that the buttercream spreads slightly to the edges, forming sandwich cookies.
- Chill and store: Place the completed cookie sandwiches in the refrigerator to firm up for easier handling. Store them in an airtight container in the fridge for up to 4 days.

- If the cookie dough is too dry, add buttermilk 1 teaspoon at a time to improve scoopability.
