Ingredients
Mascarpone Cream
- 15.87 oz Mascarpone cheese
- 1 tsp Vanilla extract
- 1/2 cup Pumpkin puree
- 2/3 cup Granulated sugar
- 1/3 cup Brown sugar
- 2 tsp Pumpkin pie spice
- 1/4 tsp Kosher salt
- 2 cups Heavy cream (cold)
Other Ingredients
- 28 Ladyfingers
- 2 cups Coffee (espresso or strong coffee, cooled)
- Cocoa powder for dusting
Instructions
- Prepare the espresso: Brew the espresso or strong coffee and allow it to cool to room temperature. Set it aside while preparing the mascarpone cream to ensure the coffee is ready for dipping the ladyfingers.
- Mix mascarpone and sugars: In a large mixing bowl, combine the mascarpone cheese, brown sugar, granulated sugar, kosher salt, and pumpkin pie spice. Use an electric hand mixer to blend the ingredients thoroughly until smooth and well incorporated.
- Add pumpkin puree: Incorporate the pumpkin puree into the mascarpone mixture, mixing until the flavor and color are evenly distributed.
- Whip heavy cream: Pour the cold heavy whipping cream into the mascarpone mixture and whip with the electric mixer for 3 to 4 minutes or until the filling thickens to a creamy consistency suitable for layering.
- Dip ladyfingers: Quickly dip each ladyfinger into the cooled coffee for 1 to 2 seconds, ensuring they are moist but not soggy, then arrange an even layer of soaked ladyfingers in a 13 by 9 inch baking dish.
- First mascarpone layer: Spread half of the pumpkin mascarpone cream evenly over the ladyfinger layer using a spatula, smoothing the surface for the next layer.
- Add second layer: Repeat the dipping process with the remaining ladyfingers, laying them over the mascarpone cream layer in the dish.
- Pipe the remaining cream: Transfer the remaining mascarpone mixture to a piping bag fitted with a star tip and pipe dollops evenly across the second ladyfinger layer to create a decorative finish.
- Chill the tiramisu: Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours to allow the ladyfingers to soften and flavors to meld thoroughly.
- Finish and serve: Before serving, generously dust the top of the tiramisu with cocoa powder for an authentic and rich touch.
Notes
- Ensure the coffee is completely cooled before dipping the ladyfingers to prevent them from becoming too soggy.
- This tiramisu is best served well-chilled to fully enjoy its creamy texture and spiced flavors.
- You can adjust the pumpkin pie spice quantity according to your preference for spice intensity.
- For a stronger coffee flavor, use espresso instead of regular strong coffee.
- Use whole milk or low-fat mascarpone cheese for a lighter version but note it might affect creaminess.
