Ingredients
Salad Ingredients
- 5 ounces mixed baby greens (142 grams or 1 standard small clamshell)
- 2 medium honeycrisp apples, sliced or chopped (or apple variety of your choice)
- 1/2 cup dried cranberries
- 1 cup raw pecans (or walnuts)
- 1/2 cup gorgonzola, crumbled
Salad Dressing
- 1/4 cup olive oil
- 2 Tbsp maple syrup
- 2 Tbsp white wine vinegar (or apple cider vinegar)
- 2 Tbsp dijon mustard (use a mild, not spicy version)
- 1/2 tsp garlic powder
- Salt + pepper, to taste
Instructions
- Prepare the Dressing: In a small jar with a lid, combine the olive oil, maple syrup, white wine vinegar, dijon mustard, garlic powder, salt, and pepper. Secure the lid and shake vigorously until the dressing is well emulsified. Set aside to allow flavors to meld.
- Assemble the Salad: In a large salad bowl or serving platter, add the mixed baby greens, chopped or sliced apples, dried cranberries, raw pecans, and crumbled gorgonzola cheese. Give the dressing another good shake, then pour it evenly over the salad ingredients.
- Toss and Serve: Toss the salad gently but thoroughly to ensure all ingredients are coated with the dressing. Taste and adjust seasoning with additional salt and pepper if desired. Serve immediately and enjoy the fresh, balanced flavors!
Notes
- You can substitute pecans with walnuts for a different nutty flavor.
- Use any sweet and crunchy apple variety if honeycrisp is unavailable.
- For a vegan version, replace gorgonzola with a dairy-free cheese alternative.
- The salad dressing can be prepared in advance and stored in the refrigerator for up to 3 days.
- To enhance texture, lightly toast the nuts before adding them to the salad.
